Tolminc PDO

Tolminc PDO is a hard, full fat cheese made from raw or thermised cow’s milk. It takes its name from the city of Tolmin, situated in the high Isonzo Valley (Zgornje Posočje), in the northwest of Slovenia. The rind of the cheese is smooth and straw-coloured; the interior of the cheese is flexible, yellow in colour, with occasional lentil- or pea-sized eyes. The smell is distinctive and free from foreign odours, and the taste sweet and piquant.

All stages of cheese production must take place in the area of the Upper Soča Valley. The first records mentioning ‘Tolminc cheese’ date back to the 13th century, when it was mentioned as a means of payment for the taxes due to the lord of the land of the time.

Tolminc PDO is typically enjoyed with fresh bread and apple jam. Each wheel weighs about 4kg and is marked with the date of the start of the maturing of the cheese or the batch designation. The cheese is left to mature on wooden shelves and is turned every day. During maturation, the flavour becomes more and more intense, rich and aromatic.
