Lingonberries
Origin: Finland

The lingonberry is a small, red, juicy berry that grows throughout Finland – it is in fact the most common shrubs to be found in Finnish forests. It yields the largest crop of all the wild berries and on average about 250 million kilos of lingonberries will ripen every year. Of this, about 30-40 million kilos will get picked.
High in acidity, it has a slightly tart flavour. Some of the most common ways to use lingonberry are in a purée or jam, which can be added to porridges, baked goods, or as a garnish to savoury dishes. Lingonberry lends itself particularly well to being paired with game meat, as it cuts through the strong earthy flavours with its acidity.
