Halloumi / Χαλλούμι PDO

Halloumi PDO is a white semi-hard, un-ripened, cheese that is made from cow, sheep, or goat's milk, in Cyprus.

The cheese is known for its salty finish and can be eaten raw but is best cooked, as its high melting point makes it an excellent choice for grilling or frying. It can be served with salads, cut into sticks to make halloumi fries, or used in cubes in an omelette. With its dense texture, halloumi is also a popular meat substitute. Halloumi pairs well with lemon, mint, pomegranate, honey, and chili.

Halloumi can be found throughout the Eastern Mediterranean and likely originated sometime in the Medieval Byzantine period; however only Halloumi produced on the island of Cyprus and according to the traditional recipe can be marketed under that name.
