Szegedi szalámi / Szegedi téliszalámi PDO

Szegedi szalámi PDO, or winter salami, is a type of Hungarian salami made from pork and spices. A simple yet flavourful cured meat, it has a delicate peppery and savoury taste.  

Szegedi szalámi PDO is cured in cold air and smoked slowly. A special mould forms on the outside of the salami during the process and protects it from going off. It has been produced in Szeged, southern Hungary, for over 140 years, where even today existing manufacturers use the same local methods as in the past. The nearby river Tisza creates a microclimate ensuring the salami’s specific characteristics from the cold curing process. 

Similar to an Italian antipasti plate, a Hungarian cold plate, or hidegtál, is a classic way to showcase this flavoursome salami. Using a simple wooden cutting board to serve, it can be piled with pickles, vegetables, cheese, and crusty bread.
