Connemara Hill Lamb / Uain Sléibhe Chonamara PDO is lamb bred, born and reared on the mountainous terrain of Connemara in the West of Ireland where it feed on herbs, heathers and grasses unique to the region.

The lamb has a natural succulent flavour and taste with a very pronounced aroma due to its diet. Its physical appearance is a lean carcass, rose red in colour, solid deep texture with a light cover of fat; perfect for the stew which is a local delicacy.

All Connemara Hill lambs PDO are affixed with a special ear tag and carcass swing tag in order to ensure full traceability from farm to slaughter. The meat is typically available between August and November, which is later than other Irish lamb breeds.
