Edam Holland PGI

Edam Holland PGI cheese is a semi-soft cow’s milk cheese usually made according to a Dutch recipe that dates back centuries to the 1300s at least. It is recognisable by its red rind, made of paraffin wax, used to protect it during transportation. The cheese itself is pale yellow in colour.
Its flavour is mild, salty and nutty, but gets sharper as it ages. Interestingly it has hardly any smell at all. The cheese pairs very well with richer fruits like apricots, peaches and cherries, and also works well as a dessert cheese with apples and pears.
Edam has a long shelf life and does not easily spoil; it hardens as it ages. Named after the town of Edam it traditionally matures on wooden shelves, sometimes up to a year. It is made with pasteurized cow’s milk. Edam Holland PGI cheese can only be produced in the Netherlands using traditional methods - including a natural aging process - with, milk from Dutch cows.
