Havarti PGI
Havarti PGI is a semi-soft cheese from Denmark made with cow’s milk and dotted with small holes. It is rindless, smooth, and slightly bright-surfaced with a cream to yellow colour depending on type. Its taste and aroma are buttery, but the taste can vary from slightly acidic to very sweet. The older the cheese, the saltier the taste with more of a hazelnut flavour.
It is an interior-ripened cheese, so after the curdling process, the cheese is pressed, cooked, divided and drained. Typically aged for three months, the ripening begins at the centre of the cheeses and progresses outward to the surface. During this process, the cheese develops a thin rind that is washed periodically.
Havarti PGI cheese can only be produced from Danish milk and at approved dairies, and comes in two types: cream Havarti and the original Havarti cheese. Cream Havarti is made using the same recipe, but additional cream is added before curdling to increase the butterfat content. It is a very versatile cheese. It’s simple enough to enjoy everyday as it is on its own or in sandwiches, but it can also be grilled, or melted with ease, and added to omelettes and pasta.
