Telemea de Ibăneşti PDO is a traditional cheese from Romania made from sheep and cow’s milk.  It is soft white with a creamy texture and a salty, tangy aftertaste. It is permeated with little holes or ‘eyes’ throughout.

Originally brought to Romania by the Vlach peoples, the Latin descendants of modern-day Romanians, Telemea PDO has grown to become the country’s most popular cheese. Production involves using rennet to curdle milk. The curd is removed and pressed overnight in cheesecloth before being cut into squares. The squares are then left to mature in a brine solution in wooden barrels, giving this cheese its distinctive tangy flavour.

Telemea de Ibăneşti PDO makes a great addition to salads and dishes like omelettes, crepes, and pies. It can also be cut into cubes and served as a snack with a drink.
